Eclective appoints Chef Richie Castillo to launch Dublin’s first Irish-Filipino Restaurant at Kaldero.

Eclective Hospitality Group is delighted to announce that Kaldero on South King Street relaunches this Wednesday, July 2nd, under the sole culinary and creative direction of Irish-Filipino chef, Richie Castillo, and his partner, food writer Alex O’Neill. 

Richie is no stranger to Kaldero as he was one of the original consulting chefs involved in the development of the restaurant. This marks the arrival of the first Irish-Filipino restaurant in the capital, and the first permanent home for Richie to showcase his culinary and creative skills.

The menu at Kaldero draws from traditional Filipino flavours and regional recipes, cooked with incredible Irish ingredients and speciality Filipino staples. Rooted in the dishes Richie grew up with, the menu reflects his bi-cultural identity and years spent refining his craft.

Much of the menu is cooked over fire on Kaldero’s custom designed Smokin’ Soul grill, hand built by Pat Conway and Jim O’Brien in Wexford, previous collaborators and friends of Bahay. Dishes are intended to be shared: pulutan-style snacks, small and large plates, and desserts, all of which are designed to speak to how Filipino families eat.

The name Kaldero, meaning ‘pot’ in Tagalog, reflects the restaurant’s ethos: a vibrant, contemporary restaurant that promises to be a cultural hub in Dublin, celebrating the best of Asian flavours, art and music.
